Texts occasionally get stuck on "sending" and I can't send/receive texts (Android-Google Pixel 7)

Problem:
I am experiencing an issue where my texts in group chats with iPhone users gets stuck on "sending" and I am unable to send or receive texts from anyone when this happens. This happens sporadically. Sometimes I'll go a full day and it never happens - other days it will happen every 30 minutes or so. The "sending" stuck situation can last for hours. It's really annoying.
Current Setup:
I have recently switched from Google Fi to Spectrum Mobile and am using a Google Pixel 7 with a physical SIM card from Spectrum. I deleted the eSIM from Fi, and it's not listed in my settings at all. The only SIM listed is the Spectrum Mobile SIM. I am also using Google's Messages app, which allows me to text from my laptop through the web browser.
Possible Causes:
I am unsure of the cause of this issue, but it could be related to MMS or a problem with Google's Messages app, Spectrum, Verizon or something else.
What I have tried:
I have tried restarting my phone, disconnecting from wifi, and looking for solutions online, but I have been unable to find a solution to this issue.
I am looking for help in identifying the cause of this problem and finding a solution to fix it.

Good evening @floridaman123 and thanks for the great question. I wonder if the Google Messages app is limited to Google Fi connection? I know for apple, iMessages only work on iphones. Have you tested with another messaging app?
