I just set up my new Spectrum TV App service and can’t figure out how to Pause, FF, and RW live TV. I also can’t seem to record shows /games that have already started. I hope I’m missing something, these would be a deal breaker. ☹️

Welcome!
Unfortunately, recording, FF, and RW are not possible yet through the Spectrum app or Spectrum TV website. It is one of our most requested features!. Recording would require subscribing to cable box DVR service. Or Cloud DVR via Internet Streaming.
For the greatest DVR functionality, a traditional cable TV DVR is recommended, You are encouraged to call Spectrum Customer Care or visit a Spectrum Store to discuss packages and pricing that meets your needs.
